How To Store Chocolate Truffles?

Wrap each chocolate truffle individually and store to prevent them from sticking to each otherRecently I had made a whole lot of chocolate truffles for my cousin’s wedding.  However, I was just not sure about how to store these chocolate truffles once they were made (I had prepared them almost 3 weeks in advance you see). My mother came to my rescue and thanks to her helpful tips the chocolate truffles were as good as fresh and the guests loved them. Here I have shared all those tips and suggestions with you:

Storage: Though chocolate truffles taste best at room temperature, they cannot be store at ambient temperature for more than few hours. The warmth and moisture in the air will turn the chocolate truffles into a sticky mess. Refrigeration is always the best short term storage option and for long term storage - freeze the chocolate truffles (I had to freeze mine).

However the truffles can dry out or ice crystals can form on them if the refrigeration or freezing is not done properly. To prevent these from happening and retain the qualities of the truffles, individually wrap each chocolate truffle in wax paper, seal them inside an air-tight container, and refrigerate. For freezing, place the truffles on a baking sheet and freeze. Once the chocolate truffles are hardened pack them in freezer bags, squeeze out all air and store in the freezer. 

Thawing: When the time comes to use the chilled or frozen chocolate truffles you need to take certain precautions. Do not just open the container and serve; for refrigerated chocolate truffles allow the container to rest at room temperature for at least 4 to 5 hrs; open the container only after the truffles reach room temperature. For the frozen truffles, thaw them in the refrigerator and then follow the steps for using chilled truffles. This way you will avoid exposing the truffles to condensation droplets and preserve the texture of the chocolate truffles

Serving: If you have dipped the truffles in tempered chocolate then you can serve the chocolate truffles directly. However, in case of cocoa powder coated chocolate truffles the cocoa powder gets absorbed during storage; hence it is a good idea to roll the truffles in cocoa once again before serving.
