Caramel sauce and syrups are best stored in glass containersCaramel is basically burnt sugar and can be used in many different forms; it can be made in form of caramel syrup, caramel sauce, hardened sugar caramel, or caramel candy. How you would want to store caramel will depend up on what type of caramel you are dealing with, here I have shared some helpful tips on storing caramel.

• Caramel syrup: Caramel in syrup form is very useful in making caramel based drinks and cocktails. The best way to store caramel syrup is to put it in an air-tight glass bottle. Avoid metal containers for they can at times impart an off-flavor and reduce the clarity of the caramel syrup. Caramel syrup stored this way will last for up to 2 to 3 weeks at room temperature and 2 to 3 months in a refrigerator.

• Caramel sauce: Caramel sauce is made by cooking sugar caramel with cream or butter along with spices; it is commonly used as a topping over a range of desserts. Like caramel syrup, caramel sauce is best stored in an air-tight container. Caramel sauce can stay good for up to 1 month at room temperature and 3 months in a refrigerator.

• Hardened sugar caramel: Sugar when caramelized will harden naturally at room temperature. Hardened caramel is used to decorate cakes, pastries and other desserts. Hardened caramel can be very fragile and sensitive to moisture, hence place them between wax paper and store in an air tight container. Hardened caramel do not store well and will not last for more than 2 to 3 days.

• Caramel candy: Caramel candies are highly hygroscopic i.e., have a very high affinity to water and can easily turn into a sticky mess. To prevent this from happening store caramel candies in an air tight container and do not refrigerate. The condensation droplets formed during refrigeration will only do more harm to the candy. Wrap each candy in wax paper to prevent them from sticking to each other. You can also freeze caramel candy, for this wrap the uncut caramel candy in wax paper, seal it in a freezer bag and freeze. To use, let the candy stay inside the freezer bag over your kitchen counter till it reaches room temperature and then open; this way you will prevent any condensation droplets forming on the candy. You can freeze the caramel candy for up to 6 months.
