Star fruits, also known as Carambolas form a five-segmented star shape when they are cut vertically. Hence, the name Star fruit. They taste best when they are completely ripe and have a golden yellow skin, a juicy, translucent flesh and are lightly dotted with dark seeds.
Star fruits are generally quite fragile and hence, are more easily prone to bruises and cuts. They also tend to turn brown quite easily. Therefore, these delicate fruits need to be handled really carefully.
A green star fruit generally indicates that it is unripe. Storing these is no pain at all. Just keep them at room temperature. However, ensure that you turn them often, so that it ripens on all sides equally. You can gradually see the green color being replaced by a subtle golden yellow color, outlined by a nice brown border on the ribs. At this stage, your star fruits are totally ripe.
Once ripe, you can store them at room temperature for a maximum of two days. You can also store them in the refrigerator for up to 2 weeks.
You can also store star fruits in the freezer. For this, however, you need to cut the fruit vertically, so that you get the star-shaped slices. Now, spread them on a plate or a sheet pan in a single layer, so that each pieces can freeze individually.
Star fruits are also quite often used in salads. Cutting the fruit just before serving them may not always be feasible. As such, you may have to cut the fruit and store them for a couple of hours before you actually serve them to your guests. Now, this may pose an unpleasant problem, since star fruits oxidize too quickly, thereby becoming black and soggy. However, you can avoid this problem and store the cut star fruit slices for a couple of hours easily if you know a quick tip. Just sprinkle some lemon juice on the cut slices. This will prevent them from darkening and you can store them in refrigerator for some time before using them.
Star fruits are rich in antioxidants and vitamin C. Star fruit juice is given to diabetics and is believed to bring the blood sugar level to normalcy. They are also believed to have diuretic properties. So, get a few of them and store them for a couple of days and enjoy their taste and benefits for a little longer time.
