  Onion 1 Small, cut in half
  Carrot 1 , sliced
  Parsley stalks 1
  Black peppercorns 6
  Salt To Taste
  Water 1 1⁄4 Pint

Place all the ingredients in a saucepan and bring to simmering point.
Spoon off any scum that rises to the surface, then cover with a lid and simmer very gently for 1 1/2-2 hours.
Strain before using.
