Ingredients
  Soup bones 1 Pound, cracked
  Shin beef 4 Pound, cubed
  Celery 1⁄2 Cup (8 tbs), chopped (With Top)
  Carrots 1⁄2 Cup (8 tbs), diced
  Onions 2 , sliced
  Parsley sprigs 4 Small
  Cloves 2
  Thyme sprig 2
  Marjoram sprig 1
  Salt 1 Tablespoon
  Cider vinegar 3 Tablespoon
  Water 3 Quart
Directions

Put all ingredients in a large pot and cover tightly.
Simmer for 3 hours.
Occasionally remove scum from top.
Cool.
Skim off fat.
Strain.
