Classic Fish Stock
|Fish trimmings||1 Pound (Whatever Your Fishmonger Can Rustle Up For You)|
|Water||1 Pint (570 Milliliter)|
|Onion||1 , quartered|
|Celery stick||2 , chopped|
|Dried thyme||1⁄4 Teaspoon|
|Dry white wine||1⁄4 Pint (140 Milliliter)|
|Freshly milled black pepper||To Taste|
1 In a large pan, place the fish trimmings with the water, wine and the rest of the stock ingredients.
2 Add in salt and pepper, and bring to simmering point.
3 Simmer for about 20 minutes, uncovered.
4 Strain the stock.
5 Use as desired.
