Classic Fish Stock

Ingredients
  Fish trimmings 1 Pound (Whatever Your Fishmonger Can Rustle Up For You)
  Water 1 Pint (570 Milliliter)
  Onion 1 , quartered
  Celery stick 2 , chopped
  Parsley sprigs 1
  Bay leaf 1
  Dried thyme 1⁄4 Teaspoon
  Dry white wine 1⁄4 Pint (140 Milliliter)
  Salt To Taste
  Freshly milled black pepper To Taste
Directions

MAKING
1 In a large pan, place the fish trimmings with the water, wine and the rest of the stock ingredients.
2 Add in salt and pepper, and bring to simmering point.
3 Simmer for about 20 minutes, uncovered.
4 Strain the stock.

SERVING
5 Use as desired.
