Fish Stock With Onion

Ingredients
  Fish bones 19 Ounce (Sole Or Turbot Preferably, But Do Not Mix Oily Fish With White Fish, 1 Kilogram)
  Onion 4 Ounce, thinly sliced (100 Gram)
  Butter 1 Ounce (25 Gram)
  Bouquet garni 1
  Lemon 1⁄2 , juiced
  Water 4 Pint (2.3 Liters)
Directions

MAKING
1. In a large saucepan, tip in the butter
2. Heat the butter till it is gently heated through
3. Add the onions, the well-washed fish bones and all the rest of the ingredients
4. Cover with greaseproof paper
5. Cover the pan
6. Sweat the vegetables on low heat for a few minutes
7. Remove the lid and paper
8. Add cold water
9. Bring to the boil on high heat
10. Simmer for 20 minutes on high heat
11. Strain and use when required

SERVING
12. Mix with other dishes as required
