Simple Fish Stock

Ingredients
  Fish bones 1 Pound (450 G, From Sole, Flounder, Turbot Or Whiting)
  Onion 1 , sliced
  Chopped parsley/Parsley stalks 15 Gram (1 Cup)
  Butter 2 Tablespoon
  Lemon peel strip 1
  White wine 65 Milliliter (1/4 Cup)
  Peppercorns 6
  Salt 1 Teaspoon
  Cold water 1 1⁄4 Liter (5 Cup)
Directions

Break the bones into pieces and put them into a pan with all the other ingredients.
Partly cover the pan and simmer the stock for 20 minutes.
Pour the stock through a sieve.
Cool the stock and then keep in the refrigerator until it is needed.
