Premium Fish Stock

Ingredients
  Onion 1 Large, chopped
  Leeks 2 , chopped
  Fish head and bones 12 Ounce (375 Gram)
  Bouquet garni 1
  Water 1 Cup (16 tbs) (As Required To Cover)
  Dry white wine 2⁄3 Cup (10.67 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Put the onion and leeks into a large pan with the fish bones and heads.
Season well with salt and pepper and add the bouquet garni.
Cover with cold water, bring to the boil and skim.
Cover and simmer for 1 hour.
Strain.
Stir in the wine and store in the refrigerator for up to 1 day.
Use as required.
