Premium Fish Stock
|Onion||1 Large, chopped|
|Leeks||2 , chopped|
|Fish head and bones||12 Ounce (375 Gram)|
|Water||1 Cup (16 tbs) (As Required To Cover)|
|Dry white wine||2⁄3 Cup (10.67 tbs)|
Put the onion and leeks into a large pan with the fish bones and heads.
Season well with salt and pepper and add the bouquet garni.
Cover with cold water, bring to the boil and skim.
Cover and simmer for 1 hour.
Stir in the wine and store in the refrigerator for up to 1 day.
Use as required.
