Gourmet Soup Stock
|Water||6 Cup (96 tbs)|
|Stewing hen||1 , cleaned and trimmed|
|Smithfield ham||2 Ounce, cut into cubes (56 Gram)|
|White pepper||1 Pinch|
Combine chicken and ham in a large pot.
Cover with water and bring to a boil.
Reduce heat to medium-low and simmer for 1 1/2-2 hours.
Skim foam from soup frequently.
Add ginger, green onion, pepper and salt and continue to simmer for 1-1 1/2 hours.
Strain stock and discard bones and seasonings
