Fish Stock With Onion

Ingredients
  Sliced onion 1 Cup (16 tbs)
  Sliced celery 1⁄2 Cup (8 tbs)
  Sliced carrot 1⁄2 Cup (8 tbs)
  Fish bones and trimmings 2 Pound (All From Lean Fish)
  Dry white wine 1 Cup (16 tbs)
  Bouquet garni 1
  White pepper/ salt To Taste
Directions

Put all ingredients and 1 quart of cold water into a kettle or stock pot and bring to a boil.
Skim.
Reduce heat, half-cover the pot, and simmer 30 minutes.
Strain through a fine sieve.
