Fish Stock With Onion
|Sliced onion||1 Cup (16 tbs)|
|Sliced celery||1⁄2 Cup (8 tbs)|
|Sliced carrot||1⁄2 Cup (8 tbs)|
|Fish bones and trimmings||2 Pound (All From Lean Fish)|
|Dry white wine||1 Cup (16 tbs)|
|White pepper/ salt||To Taste|
Put all ingredients and 1 quart of cold water into a kettle or stock pot and bring to a boil.
Reduce heat, half-cover the pot, and simmer 30 minutes.
Strain through a fine sieve.
