Potato Peel Stock
|Potato peels||6 , washed|
|Onion||1 , sliced|
|Carrots||2 , peeled and sliced|
|Celery stalk||1 , diced|
|Water||1 1⁄4 Liter (5 Cups)|
1 In a pot, combine all the ingredients.
2 Gradually bring to a boil.
3 Lower the heat and simmer for 1 1/2 hours.
4 As the water evaporates, add a little more to keep the vegetables covered.
5 Strain and discard the vegetables.
6 Store stock in refrigerator or freeze until required.
7 Use as desired.
