Ingredients
  Potato peels 6 , washed
  Onion 1 , sliced
  Carrots 2 , peeled and sliced
  Celery stalk 1 , diced
  Water 1 1⁄4 Liter (5 Cups)
Directions

MAKING
1 In a pot, combine all the ingredients.
2 Gradually bring to a boil.
3 Lower the heat and simmer for 1 1/2 hours.
4 As the water evaporates, add a little more to keep the vegetables covered.
5 Strain and discard the vegetables.
6 Store stock in refrigerator or freeze until required.

SERVING
7 Use as desired.
