Potato Garlic Stock
|Garlic||24 Clove (120 gm), crushed|
|Onion||1 , unpeeled and quartered|
|Carrot||1 , chopped|
|Rib celery leaves||1 , chopped|
|Turnip||1 , chopped|
|Potatoes||4 , scrubbed and sliced|
|Safflower oil/Olive oil||2 Tablespoon|
|Water||6 Cup (96 tbs)|
|Sage sprig/Summer savory||1|
|White peppercorns||6 , crushed|
Lightly brown garlic, onion, carrot, celery and potatoes in oil in soup kettle.
Add remaining ingredients, cover, bring to boil, lower heat and simmer 2 hours.
Strain and adjust seasonings.
Jar, cool, cover and refrigerate.
