Classic Fish Stock With Mushrooms

Ingredients
  Fish bones 500 Gram (From White Fleshed Fish)
  Onion 1 , sliced
  Celery stick 1 , sliced
  Parsley stalks 6
  Mushrooms 60 Gram, chopped
  White wine 500 Milliliter
  Water 3 Liter
Directions

Place all ingredients in a saucepan, bring to the boil.
Simmer, uncovered, for 25 minutes.
Strain.
Cool, cover and refrigerate to allow any fat to rise to surface.
Remove fat.
