Garlic Flavored Fish Stock
|Fish bones||3 Pound|
|Garlic||3 Clove (15 gm), unpeeled|
|Onions||2 , coarsely chopped|
|Carrots||2 Large, coarsely chopped|
|Chopped leeks||1 Cup (16 tbs)|
1. Wash the fish bones in several changes of water.
2. Put the butter into a large kettle over medium heat and when it melts add fish bones and water.
3. Cook, stirring, about five minutes. Add remaining ingredients and bring to the boil. Simmer thirty minutes and strain.
