Basic Vegetable Stock
|Onions||2 Large, chopped|
|Chopped carrots||2 Cup (32 tbs)|
|Celery sticks||2 Cup (32 tbs)|
|Garlic||2 Clove (10 gm)|
|Ginger piece||1 , chopped|
|Water||6 Cup (96 tbs)|
Melt butter and fry onion until brown in colour.
Lower the flame and add carrots, celery, garlic, ginger, basil and bay leaves and fry for a few more minutes, stirring until slightly browned.
Add water and let it come to the boil.
Cover and simmer for 1 hour.
Add salt and pepper and further simmer for 30 minutes more.
Skim and strain the liquid through a fine sieve.
Use this stock when required.
