Superquick Lamb And Barley Stew
|Carrots||2 , chopped|
|Celery stalks||2 Large, chopped|
|Onion||1 , chopped|
|Garlic||3 Clove (15 gm), chopped|
|Pearl barley||1 Cup (16 tbs) (Rinsed)|
|Canned beef broth||4 Cup (64 tbs)|
|Cooked lamb||3 Cup (48 tbs), cut into 1/2 inch pieces|
Melt butter in heavy Dutch oven over medium high heat.
Add carrots, celery, onion and garlic; saute until beginning to soften, about 8 minutes.
Add barley; stir until coated, about 2 minutes.
Add broth and simmer until barley is ten der, about 45 minutes.
Add lamb and heat through.
