Old Fashioned Okra Stew
|Canned whole tomatoes||64 Ounce|
|Ham hock||1 Pound|
|Sliced okra||3⁄4 Pound|
|Fresh corn||1 Cup (16 tbs)|
|Lima beans||1 Cup (16 tbs)|
|Chopped onion||3⁄4 Cup (12 tbs)|
|Diced green pepper||1⁄2 Cup (8 tbs)|
|Dried oregano||1⁄4 Teaspoon|
|Hot cooked rice||2 Cup (32 tbs)|
Combine all ingredients except rice in a large Dutch oven; bring to a boil.
Cover, reduce heat, and simmer 1 1/2 hours, stirring frequently.
Remove bay-leaf and discard.
Remove ham hock from stew.
Remove meat from the bone and chop.
Add meat to stew; stir well.
Place rice in bowls, and ladle stew over rice.
