Lima Bean Casserole Deluxe
|Dried lima beans||1 Pound|
|Cold water||4 Cup (64 tbs)|
|Salad oil||1⁄4 Cup (4 tbs)|
|Green pepper||1⁄4 Cup (4 tbs)|
|Canned tomatoes||28 Ounce|
|Grated parmesan cheese||1⁄2 Cup (8 tbs)|
Cover beans with cold water and soak overnight.
Add 1 teaspoon salt.
Simmer until tender and drain.
Heat salad oil, and saute onion until just golden.
Put beans in shallow casserole, and add oil and onion, scraping pan thoroughly.
Add green pepper, salt, 2 teaspoons sugar, and cayenne.
Combine well, so that beans glisten with oil.
Top mixture with chopped canned tomatoes, sprinkle lightly with sugar, salt, and pepper; finish with grated cheese.
Bake uncovered in oven at 350Ã‚Â°F. about 35 minutes.
