Country Pork Stew
|Lean beef stew meat||2 Pound, well-trimmed|
|Onion||1 Large, sliced|
|Garlic||2 Clove (10 gm), minced|
|Olive oil||1 Tablespoon|
|Lean pork||1 Pound, cut into 1-inch pieces and with excessive fat removed|
|Potatoes||4 Medium, unpeeled & cut into 1 1/2-inch pieces|
|Carrots||6 Medium, cut into 1/2-inch pieces|
|Green pepper||1 Medium, cut into thin strips|
|Onion||1 Medium, sliced|
|Tomato||1 Medium, cut into thin wedges|
|Beef bouillon cubes||2|
|Water||1 Cup (16 tbs)|
|All purpose flour||1 Tablespoon|
1) Preheat oven to 350° F.
2) Take a 3 quart casserole and combine together all ingredients in it except flour.
3) Sprinkle mixture with flour.
4) Cover the casserole and bake for about 2 hours or until vegetables and pork turn tender, stirring occasionally.
5) Sprinkle cilantro leaf and spoon out stew in individual bowls and serve immediately.
