Mulligan Stew

Ingredients
  Vegetable oil 1 Tablespoon
  Onions 3 Medium, sliced
  Fish fillets 1 1⁄2 Pound (Fresh / Frozen, Thawed , Such As Cod / Halibut)
  Boiling water 1 Quart
  Carrots 3 Large, pared and diced
  Canned tomato paste 6 Ounce (1 Can)
  Potatoes 1 1⁄2 Pound, pared and cubed
  Celery with leaves 1⁄2 Cup (8 tbs), diced
  Salt 4 Teaspoon
  Black pepper 1⁄4 Teaspoon
Directions

MAKING
1 In a heavy Dutch oven or kettle, heat oil.
2 Add in onions and saute until tender.
3 Slice fish into 1-inch pieces.
4 Add in fish and the remaining ingredients to onions.
5 Simmer, covered for 25 minutes or until vegetables are tender.

SERVING
6 Serve hot.
