Hearty One Pot Chicken Stew
|Skinless boneless chicken tenderloins||12 , cut into 1 inch pieces|
|Red beans and rice||6 Ounce (1 box, UNCLE BEN'S Brand)|
|Water||2 1⁄4 Cup (36 tbs)|
|Canned diced tomatoes||14 1⁄2 Ounce, undrained (1 can)|
|Red potatoes||3 , unpeeled, cut into 1 inch pieces|
|Carrots||2 , sliced 1/2 inch thick|
|Onion||1 , cut into 1 inch pieces|
1 In a large saucepan, combine chicken, beans & rice, contents of seasoning packet, water, tomatoes, potatoes, carrots and onion.
2 Bring to a boil.
3 Cover and lower the heat.
4 Simmer for 20 minutes or until the vegetables are tender.
5 Serve hot.
