Hearty One Pot Chicken Stew

Ingredients
  Skinless boneless chicken tenderloins 12 , cut into 1 inch pieces
  Red beans and rice 6 Ounce (1 box, UNCLE BEN'S Brand)
  Water 2 1⁄4 Cup (36 tbs)
  Canned diced tomatoes 14 1⁄2 Ounce, undrained (1 can)
  Red potatoes 3 , unpeeled, cut into 1 inch pieces
  Carrots 2 , sliced 1/2 inch thick
  Onion 1 , cut into 1 inch pieces
Directions

MAKING
1 In a large saucepan, combine chicken, beans & rice, contents of seasoning packet, water, tomatoes, potatoes, carrots and onion.
2 Bring to a boil.
3 Cover and lower the heat.
4 Simmer for 20 minutes or until the vegetables are tender.

SERVING
5 Serve hot.
