Oyster Stew

Ingredients
  Butter 2 Tablespoon
  Yellow onion 1 Medium, chopped
  Sweet potato 1 Medium, diced
  Fresh cut corn 1⁄2 Cup (8 tbs) (cut from 1 large ear or frozen)
  Oysters and juice 1 Pint, chopped if large (in liqueur)
  Milk/Half and half 2 Cup (32 tbs)
  Black pepper 1⁄2 Teaspoon
  Shredded asiago cheese/Parmesan cheese 2 Tablespoon
Directions

MAKING
1) In a pan, add butter and heat over till frothy.
2) Stir in onion and sweet potato and cook till softened.
3) Mix in oyster liqueur and add water till vegetables are covered.
4) Allow to boil, then lower heat, cover, and simmer till sweet potatoes are cooked.
5) Mix in corn and oysters and simmer for 5 to 6 minutes, till the oysters curl up.
6) Add milk and pepper.
7) Heat well.

SERVING
8) Top with cheese and serve.
