Ethiopian Vegetable Stew

This Ethiopian dish is one of my favorites, it’s a vegetarian meal made with few vegetables, cabbage, potatoes and carrots. The recipe is so simple but the result is so great
Ingredients
  Olive oil/Vegetable oil 1⁄2 Cup (8 tbs)
  Cabbage head 1 , shredded
  Carrot 1 Large, sliced
  Red onions 2 , sliced
  Potatoes 3 Large, peel and cut into small cubes
  Turmeric 1 Teaspoon
  Black pepper 1 Teaspoon
  Salt To Taste
  Hot water 1⁄2 Cup (8 tbs)
Directions

Heat the oil, sauté the onions until translucent, around 5 to 10min, then add the ginger and garlic paste. Then stir in carrots, cabbage, turmeric and salt.
Next, add the potatoes and some hot water (optional, you can skip adding water). Then let simmer at very low heat for 20 min (stir regularly).
When all the vegetables are tender, stop the heat and serve with rice or Ethiopian bread injera.
