Mixed Bean Stew

Ingredients
  Onion 1 Large
  Garlic 2 Clove (10 gm)
  Mushrooms 4 Ounce (115 Gram)
  Vegetable oil 4 Tablespoon
  Vegetable stock 2 Pint (1.1 Liter)
  Beans 4 Ounce, mixed (115 Gram)
  Carrots 3 Large
  Potatoes 3 Large
  Swede 1⁄2 Small
  Jerusalem artichokes 2 (Optional)
  Yeast extract 2 Teaspoon
  Chopped thyme 1 Teaspoon
  Sea salt To Taste
  Freshly ground black pepper To Taste
  Wholemeal flour 2 Tablespoon
Directions

MAKING
1) In the oil, sauté the garlic, chopped onion and mushrooms. When the vegetables have cooked, add the vegetable stock as well as the soaked beans.
2) Cook the mixture for about 35 minutes and add the remaining vegetables which have already been diced and prepared.
Except the flour, add all the remaining ingredients.
3) Cook for 35 more minutes or till the beans and vegetables have cooked properly.
4) As per requirement, add any further seasoning. Thicken the mixture with flour by first mixing the flour with some of the liquid from the stew in a cup. When the mixture is completely lump-free, mix it with the stew and bring the concoction to a boil. Stir till the mixture has thickened.

SERVING
5) Serve hot.
