Bev's Meatball Stew
|Lean ground beef||1 Pound|
|Frozen mixed vegetables||10 Ounce (1 Package)|
|Shredded cabbage||1 Cup (16 tbs)|
|Uncooked long grain white rice||1⁄2 Cup (8 tbs)|
|Medium pearl barley||1⁄2 Cup (8 tbs)|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Onion||1 Medium, chopped|
|Canned ready to serve beef broth||14 1⁄2 Ounce (1 Can)|
|Condensed tomato soup||10 3⁄4 Ounce (1 Can)|
|Water||1 Cup (16 tbs)|
|Snipped fresh parsley||2 Tablespoon|
Shape beef into 18 meatballs, about 1 1/4 inches each.
In 3-quart casserole, combine remaining ingredients.
Microwave at High for 10 minutes.
Reduce power to 70% (Medium High).
Microwave for 20 to 30 minutes, or until rice and barley are tender, stirring 2 or 3 times.
Let stand, covered, for 10 minutes.
