Easy Soybean Stew
|Dry soybeans||1 Cup (16 tbs), cooked|
|Tomato sauce||8 Ounce (1 Can)|
|Chopped onions||1⁄3 Cup (5.33 tbs)|
|Garlic||1 Clove (5 gm), crushed / minced|
|Celery stalk||1 , chopped|
|Soybeans stock||1 Cup (16 tbs)|
|Ground cumin||1⁄2 Teaspoon|
|Chopped green pepper||1⁄2 Cup (8 tbs)|
|Grated parmesan cheese||2⁄3 Cup (10.67 tbs)|
Combine all ingredients in a cast iron dutch oven EXCEPT for the cheese, stock, and green pepper.
Cook the stew for about 1/2 hour over low heat, adding stock if the mixture becomes dry.
Remove from the heat and stir in the green pepper and grated cheese. The residual heat will melt the cheese and warm the pepper. Ready to serve.
