Thrifty Meat Bean Stew
|Dry lima beans||12 Ounce (1 1/2 Cups)|
|Cold water||3 Cup (48 tbs)|
|Canned tomatoes||16 Ounce, cut up (1 Can)|
|Onion||1⁄4 Cup (4 tbs), chopped|
|Luncheon meat||12 Ounce, cubed (1 Can)|
|Beef bouillon cube||1|
|Reconstituted nonfat dry milk/Fluid milk||1 Cup (16 tbs)|
|All purpose flour||3 Tablespoon|
|Kitchen bouquet||1 Teaspoon|
Rinse beans; place in large saucepan and add water.
Bring to boiling; cover and simmer 2 minutes.
Remove from heat and let stand 1 hour.
Do not drain.
Add tomatoes, onion, and salt; cover and simmer for 1 1/4 hours.
Add luncheon meat, bouillon cube, and pepper.
Bring to boiling; reduce heat and simmer 15 minutes, stirring occasionally.
Combine milk and flour; add to stew mixture.
Cook, stirring constantly, till thickened and bubbly; stir in Kitchen Bouquet.
