Classic Lamb Stew
|Boiling potatoes||2 Pound, peeled|
|Onions||2 Large, sliced|
|Lamb shoulder||2 Pound, cut into cubes|
|Water||2 Cup (32 tbs)|
|Snipped parsley||1 Tablespoon|
Set aside half the potatoes.
Slice remaining potatoes thinly.
Spread sliced potatoes in bottom of 2-quart casserole.
Layer half the onions over potatoes.
Season lightly with salt and pepper.
Spread meat over onions.
Layer with second half of onions.
Arrange whole potatoes on top of onions.
Add just enough water to cover.
MICROWAVE 30 to 40 MINUTES on '6', or until meat is fork tender.
Let stand 10 minutes, covered.
Sprinkle with parsley before serving in soup bowls.
