Trapper's Game Stew

Ingredients
  Moose/Elk, caribou, venison/ beef pot roast 2 Pound, cut into 1 1/2 inch cubes
  Bacon fat 2 Tablespoon
  Hot water 1 Cup (16 tbs)
  Bay leaf 1
  Carrots 6 Medium, cut into 1-inch pieces
  Onions 3 Medium, chopped
  Potatoes 6 Medium, peeled and cut into 1-inch cubes
  Cabbage 1 Small, quartered
  Salt To Taste
  Pepper To Taste
Directions

Brown meat in hot bacon fat in Dutch oven or heavy saucepan.
Add enough hot water to cover meat and simmer, covered, for 1 hour.
Add bay leaf, carrots, salt, and pepper.
Simmer, covered, for 30 minutes more.
Add onions and potatoes.
If necessary, add more hot water to keep ingredients covered.
Simmer, covered, for 30 minutes longer.
Add cabbage and cook, covered, for 15 minutes longer.
Add seasonings to taste.
