Country Kitchen Stew
|Ground pork||1 Pound|
|Apple||1 Large, cored and finely chopped|
|Egg||1 , slightly beaten|
|Crushed soda crackers||1⁄2 Cup (8 tbs)|
|Poultry seasoning||1 Teaspoon|
|Flour||1 Tablespoon (For Dusting)|
|Tomato juice||18 Ounce (One Can, 1 Pint 2 Ounce)|
|Stalk celery||1 Medium, cut crosswise into thin pieces|
|Carrot||1 Medium, pared and thinly sliced|
|Onion||1 Small, thinly sliced|
|Gravy salt||1⁄2 Teaspoon|
1. Combine pork, apple, egg, cracker crumbs, poultry seasoning, and salt and pepper (for meat) in medium-size bowl; blend lightly with 2-tine fork.
2. Form mixture lightly into 16 medium-size balls; dust lightly with flour.
3 Heat butter or margarine in large frying pan; brown meat balls on all sides; transfer to 2-quart casserole; pour any drippings from frying pan.
4. Combine tomato juice, celery, carrot, onion and salt and pepper (for gravy) in same frying pan; bring to boil; pour hot gravy over meat balls.
5. Bake, covered, in moderate oven (350°) for 40 minutes; remove cover; bake 10 minutes longer, or until meat is thoroughly cooked, vegetables are tender and gravy is slightly thickened.
