Delicious Lamb Stew
|Cooking apple||1 Large|
|Plum jam||1 Tablespoon|
|Lamb neck||2 Pound, seasoned (Best End)|
|Flour||To Taste, seasoned with salt and pepper|
Trim meat and cut into chops.
Dredge with seasoned flour and brown in heated oil.
Chop onions, slice carrots, parsnip, celery and peeled apple.
Add vegetables and apple to frying pan and saute a few minutes.
Stir in plum jam and stock, bring to boil, reduce heat; simmer for 1 1/4 hours or until tender.
If extra thickening is required, blend a little seasoned flour with water and add to stew, stirring.
