Meat And Fruit Stew
|Boneless sirloin beef||2 Pound, trimmed, cut into 2.5 centimeter (1-inch) cubes (1 Kilogram)|
|Butter/Margarine||15 Milliliter (1 Tablespoon)|
|Chopped onion||250 Milliliter|
|Canned tomato paste||15 Milliliter (1 Tablespoon)|
|Salt||2 Milliliter (1/2 Teaspoon)|
|Pepper||1 Milliliter (1/4 Teaspoon)|
|Ground thyme||1 Milliliter (1/4 Teaspoon)|
|Condensed beef broth||1 Can (10 oz) (284 Milliliter)|
|Potatoes||2 Medium, pared, cut into large cubes|
|Acorn squash||1⁄2 Medium, seeded, pared, cut into large cubes|
|Sweet potato||1 Medium, pared and cut into large cubes|
|Pear||1 , cubed|
|Apple||1 Medium, pared and cubed|
|Seedless raisins||30 Milliliter (2 Tablespoon)|
|Chopped parsley||15 Milliliter, chopped (1 Tablespoon)|
Saute beef in butter or margarine until well browned on both sides.
Add next eight ingredients.
Cover; simmer gently 1 1/4 hours or until meat is almost tender.
Add potatoes, squash and sweet potato; cover; cook 20 minutes longer.
Add pear, apple and raisins; cover; cook 10 minutes more.
Garnish with parsley.
