Boatman's Stew

Ingredients
  Firm fleshed white fish 2 Pound, cut in large chunks (Cod, Haddock Or Halibut)
  Salt To Taste
  Onions 2 , sliced
  Pure vegetable oil 2 Tablespoon
  Canned tomato paste 6 Ounce (1 Can, Hunt's)
  Water 3 Cup (48 tbs)
  Black pepper 1⁄2 Teaspoon
  Red pepper 1⁄2 Teaspoon
  Finely chopped parsley 1 Cup (16 tbs)
  Dry white wine 1⁄3 Cup (5.33 tbs)
  Italian bread slice 6 , toasted, if desired
Directions

Sprinkle fish with 1/2 tsp.salt; let stand 1 hour.
Meanwhile, lightly brown onion in oil; pour off fat.
Stir in Hunt's Tomato Paste, water, red pepper, 1 1/2 tsps. salt, black pepper, parsley and wine.
Simmer 20 minutes.
Add fish; simmer about 10 minutes longer or just until fish flakes easily with a fork.
