Hearty Lamb Stew

James is cooking Korean Lamb Stew in his kitchen, see how to prepare and try out.
  Lamb 2 1⁄2 Pound
  Onion 1⁄2 Large
  Tomato sauce 8 Ounce (1 Can)
  Beef stock 4 Cup (64 tbs) (Adjust Quantity As Needed)
  Salt To Taste
  Pepper To Taste
  Flour 1 Tablespoon
  Thyme 1 Tablespoon
  Carrots 2 , diced
  Potato 1 Large, diced
  Oil 2 Tablespoon

Season the meat with salt and pepper, add flour and mix well.
In a pan, heat the oil, add the meat and cook until brown. Stir in the onion, garlic, tomato sauce, mix well and cover with the beef stock. Boil on a medium heat, add thyme; simmer for 1/2 hour. Skim off the fat over the pan.
Stir in the carrots and the potatoes; simmer until the vegetables are just tender. Adjust the seasoning and simmer for further 5 minutes.
