this dish is popular in ecuador-guayaquil in south america were i was born as there is many more delicious recipes all over the country like cuenca or quito ,manabi , salinas and many other more places.
Ingredients
  Beef strips 2 Pound, washed and chopped (2 Pack)
  Oregano 1 Teaspoon
  Cilantro 2 Tablespoon, washed & chopped
  Beef strip 2 Cup (32 tbs), washed and chopped
  Garlic head 1
  Onion 1 , chopped
  Cumin 1 Teaspoon
  Saffron/Achoite 1 Tablespoon
  Basil 1 Teaspoon
  Salt 1 Tablespoon
  Milk 1 Cup (16 tbs)
  Peanut butter 7 Tablespoon
  Cilantro 1 Cup (16 tbs), washed and chopped

hi my mom is ecuadorian but i have never seen her do the guatita n well im trying it out myself and the way she told me is a little different from how you show it in the video ..is there different way to boil the meat cuz my mom told me to of course clean the tripe well and boil in water n then drain it leaving only a little bit of the boil water set aside for later when all the mixture come in...she said that in the meantime while its boiling i should do a sofrito ( i think u know what that is it contain blended onion, garlic, tomato, achiote, green pepper) n put potato n peanut butter when we put it all together ...so its there different ways to make guatita
