Ancona Fish Stew
|Assorted fish||2 Pound (Mullet, Sole, And Halibut Fillets)|
|Onion||1 Large, thinly sliced|
|Olive oil||1⁄2 Cup (8 tbs)|
|Water||1 Cup (16 tbs)|
|Dry white wine||1 Teaspoon|
1. Cut fish fillets in 2 1/2 inch pieces; set aside.
2. Saute onion in olive oil until golden. Sprinkle in salt, pepper, and saffron. Add the fish and enough water and wine to cover the fish. Bring to boiling and cook over high heat 10 to 15 minutes.
