Crabmeat Stew

Ingredients
  Salt pork 4 Ounce, diced
  Canned crabmeat/1 pound fresh crab meat 14 Ounce
  Bacon fat 2 Ounce
  Crisp bacon pieces 1 Ounce
  Onions 4 Large, chopped
  Garlic 6 Clove (30 gm), minced
  Celery 1 Bunch (100 gm), diced
  Tomatoes 2 Can (20 oz) (Or One # 2 Size Can)
  Sugar 1 Teaspoon
  Bay leaf 1
  Green peppers 2 , chopped
  Salt To Taste
  Pepper To Taste
Directions

Fry out salt pork and add to bacon.
Combine onion, peppers and garlic; saute'.
Add celery, tomatoes, sugar and bay leaf.
Simmer 10 minutes.
Add crabmeat, salt and pepper.
Simmer 20 minutes.
The flavor is developed if stew is allowed to stand about 1 hour.
Reheat and serve over white rice.
