Newfoundland Fisherman's Stew
|Cod||2 Pound, diced (Fresh)|
|Potatoes||2 , finely diced|
|Leeks||2 , chopped|
|Celery leaves||1 Tablespoon, chopped fine|
|Lean salt pork slices||1|
|Boiling water||2 Cup (32 tbs) (To Cover Vegetables)|
|Hot milk||2 Cup (32 tbs)|
Put successive layers of potatoes, leeks, celery greens, seasoning and pork in clay baker.
Cover with boiling water.
Close and bake 1/2 hour.
Remove clay baker from oven (be careful of steam), lower oven temperature.
Add pieces of fish.
Stir in hot milk.
Close and bake another 20 minutes.
