Albanian Lamb Stew

Albanian lamb stew is a simple yet refreshingly delicious stew made with lean lamb meat. Cooked in yogurt with eggs, the albanian lamb stew is light on the stomach and can be served with bread and a side salad.
Ingredients
  Lean lamb/Boneless shoulder / leg of lamb 1 Pound, cut into 3/4 inch cubes
  Vegetable oil 2 Tablespoon
  Water 1 Cup (16 tbs)
  Eggs 2
  Plain yogurt 1 Cup (16 tbs)
  Salt 1⁄2 Teaspoon
Directions

Brown lamb in hot oil in large skillet.
Add water; simmer, uncovered, until water has evaporated, about 20 to 25 minutes.
Place meat in greased, shallow, 1-quart casserole dish or individual ramekins.
Beat together eggs, yogurt, and salt.
Pour over meat.
Bake in preheated 350°F oven 20 minutes or until golden brown.
