Peppercorn Steak

Peppercorn steak is quite a delicacy and is traditional a French dish where tenderloin is covered with peppercorns and then cooked. The peppercorns are like a crust on the steak and add a rich flavor to the steak. Peppercorn steak is usually accompanied by a pan sauce made from reduced cognac, heavy cream, butter, shallots, Dijon mustard and the fond from the bottom of the pan. There are a number of different ways in which peppercorn steak can be prepared and enjoyed. One of the recipes is the brandy flavored peppercorn steak where steak is coated with peppercorns and then cooked in garlic and wine till it becomes tender. Finally brandy is poured and then onions and shallots are arranged around the steak and served.
