Piquant Rib Steak
|Green peppercorns||1 Teaspoon|
|Black peppercorns||1 Teaspoon|
|Rib steak||1 1⁄2 Pound (Sirloin Steak)|
|Tarragon vinegar||2⁄3 Cup (10.67 tbs)|
|Cornstarch||1 Teaspoon (Cornflour)|
|Madeira wine||3 Tablespoon|
|Sour cream||3 Tablespoon (Creme Fraiche)|
|Dijon mustard||3 Tablespoon|
Crush the green and black peppercorns in a pestle and mortar or pepper grinder.
Roll the piece of steak in the pepper and pour over the vinegar.
Marinate for 30 minutes at room temperature.
Turn the steak over and marinate for a further 30 minutes.
Drain the meat and put in a small dish.
Cover and micro wave on HIGH for 3 minutes.
Leave to stand for 5 minutes.
Put 1/4 cup (3 tablespoons) of the marinade into a small bowl and mix in the cornstarch (cornflour) gradually to form a smooth paste.
Add the Madeira, sour cream (creme fraiche) and mustard.
Microwave on HIGH for 1 minute.
Add the cooking liquid and microwave on HIGH for 1 further minute.
Stir well, taste and adjust the seasoning.
Pour into a heated sauceboat.
