Rolled Flank Steak
|Crushed onion crackers||2 Cup (32 tbs)|
|Tomato juice||1⁄2 Cup (8 tbs)|
|Diced celery||1⁄2 Cup (8 tbs)|
|Flank steak||2 Pound|
Combine crackers, tomato juice, celery, butter and seasonings.
Mix together well.
Spread stuffing on scored slice of steak to 1-inch of edge.
Roll lengthwise jelly roll fashion.
Insert metal skewers or tie in sixplaces.
Cut between skewers or string to mark six even portions about 2 inches wide.
Wrap strip of bacon around each portion; secure with toothpick.
Place roll in shallow baking pan.
Bake at 350 degrees for 30minutes.
Increase heat to 425 degrees; bake another 15 minutes until bacon is crisp.
If desired, may be cooked additional 5 minutes in a continuous roll and sliced between skewers.
