Steak And Onions
|Steak||1 1⁄2 Pound, grilling|
|Butter||1⁄4 Cup (4 tbs)|
|Onions||2 Large, sliced|
|Black pepper||1 , freshly ground|
Cut steak into four pieces, unless purchased in four portions.
Melt butter in a heavy frying pan and fry onions until just soft but not browned.
Lift onions out and put aside.
Increase heat under frying pan and place steaks in pan, moving them occasionally so that they do not stick.
Cook according to taste, searing steaks on each side for 1 minute, then reduce heat a little and continue to cook fori 3-5 minutes on each side.
Lift steaks out onto a warm platter.
Return onions to pan over a medium heat and cook until brown, stirring continuously so that pan juices mix with onions.
Sprinkle steak with salt and pepper and serve hot with onions spooned over.
