Minute Steak Piquant

Ingredients
  Boneless rib steak/Strip steak 32 Ounce (4 Lean Steaks, 8 Ounce Each)
  Salt 1 Teaspoon
  Freshly ground pepper To Taste
  Dry mustard 1 Teaspoon
  Lemon juice 3 Tablespoon
  Chives 2 Teaspoon, snipped
  Worcestershire sauce 1 Teaspoon
Directions

GETTING READY
1) Place the steak on the board and flatten to 1/3 inch thickness, using a mallet.
2) In a small cup, mix together salt, pepper and mustard.

MAKING
3) Dredge the steak with the mustard mixture.
4) Broil the steak quickly or cook in a non-stick pan to desired degree of doneness.
5) In a small bowl, lemon juice, chives and Worcestershire sauce.

SERVING
6) Spoon the chives mixture over the steak.
7) Serve the steak hot and garnish with arugula leaves if desired.
