Steak Hussar Style
|Sirloin steak||1 Kilogram|
|Lemon||1⁄2 , juiced|
|Browned breadcrumbs||1 Tablespoon|
|Egg yolk||1 , beaten|
Wash and wipe meat.
Beat with the flat end of a chopping knife.
Mix a little salt and pepper into the flour and dredge meat with it.
Melt 3 tbs butter and brown meat in it on both the sides.
Add lemon juice to a cup of water and pour over meat.
Cover and simmer for a while.
Chop onion and saute in remaining butter, until trans- parent keep aside half the quantity of onion and add breadcrumbs, salt and pepper to the other half.
Mix these into the beaten egg yolk.
Remove meat from the pot and make crosswise incisions into it.
Stuff incisions with filling.
Place the remaining onion in a large pan or casserole, add meat and 1 cup warm water.
Cover and cook in a mod oven for a little over 1 hour until the meat is tender.
Slice and serve with mashed potatoes and vegetables.
