Grilled Porterhouse Steaks With Lemon And Chive Butter

Ingredients
  Porterhouse steaks 6 , well hung and trimmed (1 Inch Pieces)
  Oil 1 Tablespoon
  Ground pepper To Taste
  Salt To Taste
Directions

One hour before grilling time, remove steaks from refrigerator.
Smear with oil and grind black pepper on both sides.
Snip fat edges of the meat.
Let come to room temperature.
Grill 5" from the coals, turning once during the cooking, 5-6 minutes for rare, 8-9 minutes for medium, and 10-13 minutes for well-done.
Salt each side after it is cooked.
Serve with curls of lemon and chive butter.
