Spencer Steak With Blue Cheese Sauce

Ingredients
  Madeira 3⁄4 Cup (12 tbs)
  Minced shallots 2 Tablespoon
  Whipping cream 1 Cup (16 tbs)
  Beef broth 1⁄2 Cup (8 tbs)
  Unsalted butter 1⁄2 Cup (8 tbs)
  Blue cheese 6 Ounce, crumbled
  Dijon mustard 2 Tablespoon
  Thick spencer steaks 1 1⁄2 Pound (4 3/4 Inch Thick)
  Salt To Taste
  Pepper To Taste
Directions

Mix Madeira and shallots in small saucepan.
Boil until reduced to 2 tablespoons.
Add cream and beef broth and boil until reduced to 1 cup.
Mash butter, blue cheese.
Whisk into Madeira mixture a bit at a time.
Simmer until creamy.
Keep warm.
Rotate the steaks in the Flat Standard Basket for 16 minutes for rare or 20 minutes for medium.
If not brown enough, position the basket facing the heating coils and turn the pause-to-sear switch to off.
Rotate 2 to 3 minutes more on each side.
