Marinated Bear Steaks
|Bear steaks||4 (1 1/4 To 1 1/2 Inches Thick)|
|Onion||1 , sliced|
|Red wine vinegar||1⁄2 Cup (8 tbs)|
|Olive oil||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm), smashed|
|Pickling spice||1 Tablespoon|
|Water||1⁄2 Cup (8 tbs)|
Trim all fat from steaks.
Discard fat; wash steaks well in cold water.
In a large glass bowl, combine onion, vinegar, olive oil, garlic, pickling spice, and water.
Place steaks in marinade and marinate for at least 24 hours in the refrigerator, turning steaks from time to time.
The next day, remove steaks from marinade.
Drain and pat dry.
Using just enough oil to prevent steaks from sticking, pan-fry the steaks, turning occasionally, for 15 to 20 minutes.
Season with salt and freshly ground pepper.
