Gaelic Steaks

  Oil 15 Milliliter
  Butter 50 Gram
  Onion 1 Large, peeled, finely chopped
  Garlic 1 Clove (5 gm), crushed
  Ground black pepper To Taste
  Sirloin steaks 4 (Home Produced)
  Whiskey 60 Milliliter
  Parsley 30 Milliliter, finely chopped
  Lemon juice 5 Milliliter
  Butter 2 Ounce
  Oil 1 Tablespoon
  Whiskey 4 Tablespoon
  Chopped parsley 2 Tablespoon
  Lemon juice 1 Teaspoon
  Salt To Taste

Melt the butter and oil together in a large heavy frying pan.
Add the onion and garlic (if using) and saute gently for about 5 minutes without colouring.
Season the steaks lightly with salt and generously with pepper.
Add to the pan and fry quickly for 2 to 4 minutes on each side (depending on how rare they are required to be).
Warm the whisky, add to the pan and flambe.
Stir in the parsley and lemon juice.
Turn the steaks over and cook gently for 1/2 to 1 minute.
Taste and adjust the seasonings, if necessary.
Serve immediately.
